MEXICO
- Grilled meat with
- Tacos stuffed with
- Cabbage or a Mexican Coleslaw
- Cheese – Mexican Cotija is the most popular. Feta and goat cheese work if you can’t find that. Or you can always use shredded cheddar cheese.
- Avocado
- Chopped onion
- chopped tomatoes
- Pico de Gallo
- A squeeze of lime
- Sauce – this has a cilantro (coriander) lime sauce, but a green chili sauce or even salsa makes them delicious.
- Mexican coleslaw
- 4 cups coleslaw mix1/4 cup cilantro, , finely chopped1 small jalapeno, , finely chopped1 lime, Red Wine Vinegar Single-Serving Portion Packs, (depends on how much dressing you like),Extra Virgin Olive Oil Single-Serving Portion Packs, (depends on how much dressing you like)Salt and pepper to taste.
I reckon therefore :- tacos or other Mexican Flatbreads; a coleslaw of avocado, onion, lemon or lime, a chilli, Olive oil and Red or white wine vinegar, chopped tomatoes and maybe cucumber, and then grilled meat or fish.
Alternatively to tacos, a roll with mayo on one side and coleslaw on the other and meat in the middle.
