A classic apple pie – looks like a cake recipe to me!

1kg apples;2 large eggs;325kg caster sugar;80ml brandy;200ml olive oil;400g plain flour;1tsp cinnamon;2tsp baking powder; good pinch of sea salt. 180C 40 minutes.

  1. Peel quarter and slice thinly the apples width ways. 2. Separate the eggs and whisk whites. Add apples and half sugar 3. Chop walnuts in food processor. 4. Mix rest together with nuts. 5. Press half mixture into bottom of a 24cm x 30cm tray. 6. Add apple and meringue mixture. 7. make small balls of the rest of mixture and flatten then add to try. 8. Cook 180C 40 minutes
