PIZZA per Ellie and Aaron

Make dough 200g ‘OO’ flour, a splash of olive oil, 100ml water, tbs dried yeast, and a pinch of salt. I like to add a tbs of fresh thyme and/or oregano and some chopped olives. Mix nit up and cover the bowl with a tea. towel and leave for a couple of hours to rise in a warmish place.

Make sauce topping – I like to use quality chopped tomatoes, some sun dried tomatoes, onion, garlic, and basically whatever – mushrooms, peppers. Basically whatever you like. Cook in frying pan until not too runny.

Heat oven to 250C about 25 minutes before you cook the pizza to ensure it is really hot, with your baking tray or pizza stone in it.

Slice mozzarella, grate parmesan, grate cheddar, chop ham, cut pineapple if using. Basically get the topping prepped. Oh, and some chopped basil is a really good mate with tomatoes and cheese!

Roll dough really thin (that is how I like it). Put dough on baking sheet/stone. Add the sauce, then the cheeses and other toppings.

Turn oven down to 220C and bake for 10 minutes – check after about 7 minutes to see how it is going. If dough is browning take it out.

I think the quality flour and the hot oven are the key bits – you can play with the rest of the ingredients.
