A PARISH RECIPE -CHEESEY HERB STRAWS

This is not a conventional recipe. Firstly get up when the blackbird sings (about 5 am at present. Shower to ensure cleanliness. Then wipe down the surfaces to be used to ensure very clean. Then go into garden and pick some thyme and rosemary. The thyme is a pain to pick off the little leaves, and at about 5.20 am not conducive to the day ahead. So I cut them with secateurs and then soaked them in boiling water after picking off a few stalks. As kettle has boiled it is worth having some coffee. Ah, then get some cheese – I had cheddar (a lump) and some parmesan (too hard so after a bit of whizzing I threw away).

Oh then I measured (yep measured) about 200g of OO flour and what I think was a tsp of yeast. All in food processor with water from thyme – enough to make a dough – so probably about 100ml. I also aded some chopped greek basil and chopped fresh rosemary. And some crushed garlic. And I added a plop of olive oil. Then mix in food mixer and leave to rise. So I went and did the papers and had a nice chat with Aaron and Kate, and Holly brought my brolly back – it was raining yesterday, and I could wait for it to stop, but she had to walk to school. Siri joke was Ok today. then I went veg shopping in Draycott.

Dough had risen nicely. I rolled it out and found the pizza cutting disc to cut strips which I twisted. I then added the pepper – which I should have done earlier, and totally forgot the salt. I read somewhere that salt kills yeast, so I left it to the end, but actually forgot it altogether. I preset the oven for 200C for 8 minutes and then got Siri to add another 2 minutes nd then another 3! I guess it would have been better to cook at 220C for 12 minutes. Next time a bit longer, as recommended by Aaron.

But it did not matter as they have all disappeared with happy faces. Maybe the getting up early part is partly to blame?
