Quiche recipe

And as ever, an adaption by me! Pastry – I have not got in the swing of making my own yet, so it is bought puff or short crust pastry for now. Vegetables, well I just love onion. Advice is to slow cook to get rid of as much moisture as possible (especially if using spinach – squeeze dry and then twist in clean tea towel). I reckon 2 leeks, 1 onion and 4 frozen spinach balls for my experiment. 50g of hard cheese like gruyere or cheddar and parmesan. 120g creme fraiche and 4 medium eggs. Pinch of either/or/and nutmeg, cayenne, mustard powder, ground pepper; and salt.

Roll out pastry and line tin then chill in fridge whilst doing rest. Oven to 180c. Prick pastry with a fork, line with greaseproof paper and baking beans – 10 mins- remove paper and beans and do another 5 mins. Set aside,

Whisk eggs and beat in creme fraiche and season. Spoon in 2/3 of veg into pastry case, then the cheese. Pour in the custard and add remaining veg if room. Season with pinch of whatever. Bake 25-30 mins. Leave to cool.
