TOMATO RECIPES

So then to my own recipe! I am slow roasting tomatoes and onions and garlic and a lemon and salt at 160C for 30 minutes or as long as it takes to get them soft. Then squeeze the lemon and discard. Then I will whizz, maybe with a tsp of white wine vinegar, and then bottle. Basil and chilli and peppers can be added later. I have also dried some and put into olive oil to use later.

I am also thinking about a tomato curry paste! Before I look it up I am thinking of adding something sweet and maybe some green beans for colour? So a jalfrezi – 2tsp cumin seeds and one each of coriander, mustard and fenugreek -toast for 2 mins. 2 cloves garlic and 5cm ginger, 1 tsp ground turmeric, 1/2 tsp salt, 2tsp oil, 2tsp tomato puree (I will use more my own paste from above), a chilli, 1/2 lemon juice and whizz with fresh coriander. Voila.
