Chilli sauce

OK, so I start with amounts I have lifted from recipes- and I have just changed this!

3 garlic cloves, 2 onions, and a couple of toms or a handful of cherry ones

200ml apple juice, and a couple of peeled apples

170 ml cider vinegar,

600ml water,

60g sugar (brown),

2tsp salt.

And then chillies – um, let me think about this! Whizz what I have said above and then add chillies (and my home grown ones are a mix of not hot at all and volcanic!) – no, that won’t work as I have to add the sugar when in the sauce pan. OK. I will have to wing it! Whizz without the sugar and cider vinegar with a guess at chilli hotness? Oh boy this could be fun! or a mouth numbing disaster! TASTE – I guess adding chillis a bit at a time, or adding toms if too hot?

I guess I then taste and …. and see what happens! We will see how it turns out tomorrow!
