Recipe – 25 heads of elderflower (thick stems removed), zest of 3 lemons and an orange. Pour over 1.5 ptrs of boiling water and leave to infuse overnight. Strain through muslin, add 1kg (this is what the recipe says, I will add less, or even honey instead), add the juice of the lemons and orange and a heaped teaspoon of citric acid if fancied. Simmner to melt sweeteners, and pour into sterilised bottles. Sounds simple and for the most part it is but I have often had bottles explode in the past when trying to make too much. Maybe I should try and dry some flowers to use when fancied?
