MULLED WINE AND CIDER

This one looks good – with brandy. But use a bit of the wine, spices and sugar to heat first.

So a generic recipe:-

Zest lemon and lime, the peel off skin as this can make drink a bit bitter. Add some honey or maple syrup or sugar (a couple of tablespoons should do – but taste!). Add cinnamon stick, 2 star anise, 4 cloves, 1 cardamon (optional). Add wine to cover and heat to dissolve sweetener and get spices infused. After a couple of minutes turn down heat and add rest of wine, slices of skinned orange/clementines, satsuma or whatever.
