Recipes vary immensely so I will go for the following :-
Quantities in proportions not fixed amounts!
1kg onions
1ltr vinegar
5 allspice corns
Chillies – either 1/2/3 of my own or 2tsp chilli flakes
2tsp mustard seeds
10 pepper corns
4 bay leaves
2 tbsp honey – or 150g sugar – a huge difference!
