RECIPES – VEGGIE and pineapple rum cake

PINEAPPLE RUM CAKE. I have a pineapple, and thought about something different!

I have looked at some recipes! So here is my take on it.

I have not totally sorted the cake mix yet. Baking in a baking tray makes sense. So oven to 180C. 250g softened butter; 125g caster sugar and 125g brown sugar (MIX), add 4 eggs (one at a time), 240g plain flour, 3tsp baking powder, 1/2 tsp bicarb, 1/2 tsp salt, 1 tsp vanilla extract, 3tbs pineapple juice – possibly add juice from stem ginger? Then cook for 40 minutes – cool for 5 minutes, then turn out.

Now the exciting bit. melt 75g butter and 100g soft brown sugar with half small bottle of rum and the chopped pineapple (be fancy with rings if you wish). Mix for 3 minutes. Take off the heat, arrange pineapple and then add the rest of the rum! Pour over the cake and eat with ice cream.
