TOMATOES

Not sure what to call this!

Firstly I have skinned 24 tomatoes and then roasted them with onions and garlic and Szechuan pepper, pepper and mustard seeds, and salt, oh and a couple of dried chillies!. When cool I am going to whizz them in the FP, and then return to the pan with some gram flour to thicken? Do I add some sugar, lemon or cider vinegar? Or even an apple?

Then separately I thought I would cook some chick peas and have them with the sauce.

Which ten begs the question – do I add cumin, coriander, fenugreek? And if not hot enough some harissa? Then serve with fresh parsley and basil (except I have not got any basil!).

I also have some thyme, rosemary and lemon sauce with cider vinegar which I was thinking of, but now I am definitely not – but I might add honey and have as a bedtime nightcap!

I still have 26 tomatoes to go!
