STRAWBERRY AND ELDERFLOWER JAM

So trip to supermarket to get stocked up with jam sugar and lemons.

Then a boring hour hulling the strawberries – Cheddars finest! Then cover and leave overnight with the ingredients (rumoured to enhance the flavours). Then heat up, ensure that the sugar has dissolved and then boil for 8-9 minutes and test temperature for it to be at least 105C or get a t-spoon and add a dob to a saucer that has been in the freezer – it should set. Then put in sterilised jars – I reckon that my generous 3kg of strawberries will make 15-18 jars. Cost is strawberries £5, sugar £4, lemon juice £1 all approx. So about 80p a jar.

I have also promised Tamz that I will make some apricot jam – so I will see what the prices are in the supermarket, and then for some traffic light jam!
