Whatever you are eating this Christmas, one of the joys of a roast is gravy. So here is a veggie version which I have tried and is great. GRAVY

I will certainly be having a nut roast over the next few days, all ingredients are interchangeable! A NUT ROAST . This one has a huge list of ingredients – but it is Christmas!

KOMBUCHA

I am quite excited as Martin is getting me a SCOBY to start making my own kombucha. And some festive jokes!

CAKES AND BAKES

I am new to this game. But looking at a variety of recipes am I correct in thinking that butter, flour and sugar should be in approximately equal amounts. Obviously the type of each fat (olive oil), flour and sweetener (honey or alternative). can change. Then 3 eggs to 180g. Teaspoon of baking powder and or bicarb?. Oven at 170C.

Then if that is the base there is a topping which can obviously be anything but ideas are mascarpone or cream cheese for less sweet option. Vanilla extract, rosewater, orange and lemon zest. basically these recipes seem like my cookie recipes without the oats. Being xmas I tend to add nutmeg and cinnamon and ginger.

Baked apricots with lemon verbena.

500g apricots halved and stoned: Handful of lemon verbena leaves Left to infuse in 700ml boiling water for 10minutes. 3 tbs honey, 1 star anise and one vanilla pod (if you can afford one!). Pour over apricots and spice and then bake for 40 mins at 180C. Cool, chill and serve with cream or yogurt.

Experiment – loaf

Apricot and cheese loaf/rolls? I have found a couple of recipes and will adapt them. Basically my usual bread loaf recipe and add chopped apricots and grated cheese before second prove. 175C for one hour. (seems a bit long so I will check after 45 mins).

COOKIE UPDATE

Off to a flyer this morning. Cookies made by 6.25am together with dough for bread rolls later. Cookie very well received at shop, chocolate, walnuts, raisins, and coconut blossom sugar as well as oo flour, butter and oats – a substantive meal in every bite!

LIFE SKILLS

When I was little, a long time ago, I do not remember going out in nature unless for a reason, or cooking – other than hanging around to lick the spoon and hopefully the bowl. But we had a garden and allotment, and mum cooked a lot. My mum did not have to work to pay the mortgage like most families do today. Takeawys and fast food have seemingly taken over. Jamie Oliver does his bit as do lots of other. Countryfile and Packham and Attenborough do their best. But both these topics should be an integral part of our way of life and culture, not a 30/50 minute TV slot.
